This colorful and healthy chicken dish is one the whole family will love. It’s simple, yet filled with great flavor! With only 15 minutes of prepping you will be able to make a nutritious and filling dinner that everyone will enjoy.
-1 tsp olive oil
-1 boneless, skinless chicken breast
-250ml chicken stock
-1 red onion, finely chopped
-1 red pepper, finely chopped
-1 tbsp fresh parsley, chopped
-1 lemon grated zest and juice
-1 tbsp pesto sauce
-freshly ground black pepper
-Preheat the oven to 200°C.
-Heat the oil in a non-stick pan, add the chicken and fry for 2 minutes on each side or until browned.
-Place the couscous in an ovenproof dish. Mix together with the chicken stock, red onion, red pepper, parsley and the lemon juice and zest, pour over the couscous and stir.
-Place the chicken on top of the couscous, apply pesto with a spoon over the chicken. Season to taste!
-Cover the dish with foil and bake for 20 minutes.
-Once cooked, fluff up the couscous with a fork. Can be served hot or cold!
