Chicken and Chickpea Traybake
With a prep time of just 5 minutes, and a 30 minute baking time, this recipe will get your house smelling fantastic and your stomach will be thanking you. A family favorite, and a perfect, satisfying meal that is quick and easy, but you would never know!
INGREDIENTS 8 Chicken Drumsticks 400g can chickpeas, rinsed, drained 1 tbs Moroccan seasoning 500g cherry tomatoes 60g Spinach ½ tbs salt
METHOD Preheat oven to 200°C. Grease a large baking dish. Arrange the chicken and chickpeas in the prepared dish. Sprinkle with the Moroccan seasoning. Bake for 30 mins or until the chicken is cooked through, Add spinach to dish. Cover with foil and set aside for 5 mins to rest. Season. Enjoy!
