4 chicken breasts (boneless, skinless, 4-ounce)
2 medium zucchinis (cut into 1/4 -inch rounds)
10 oz grape tomatoes
1 tbsp olive oil
¼ tsp black pepper
1 tsp dried oregano
⅓ tsp salt
2 tbsp dijon mustard
½ tsp garlic powder
1 tbsp freshly grated parmesan cheese
- Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. In a separate bowl, combine tomatoes, zucchini and olive oil with pepper. Toss together and mix well.
- In another bowl, mix lemon juice and mustard.
- Season the breasts, coating both sides, with pepper, garlic powder and oregano. Put chicken breasts in the baking dish and brush the top with mustard mixture. Sprinkle the top with Parmesan cheese!
- Pour zucchini and tomatoes around the chicken in the same baking dish. Bake for 30 minutes or until done.
- Serve and enjoy!
