One-Pan Parmesan asparagus with roasted prawns


What is there to love more than a delicious, elegant one-pan dinner! No hassle of all the different pots and pans used to make a gourmet meal. Instead, use one pan sheet with chili roasted prawns, and delicious asparagus with freshly grated Parmesan. The whole family will love this simple and tasty meal!

500g peeled Prawns, peeled leaving tails intact, de-veined

2 bunches asparagus, trimmed

2 tbs extra virgin olive oil- divided 

40g finely grated Parmesan

1 tsp salt

4 garlic cloves, finely chopped

1 tsp smoked paprika

¼ tsp dried red chili flakes 

1 tbs finely chopped flat-leaf parsley

  1. Position a rack in the lower third of oven and preheat oven to 250 degrees C. Line a large rimmed baking tray with baking paper. 
  2. On the lined tray, toss asparagus with 1 tbs oil. Arrange in 1 even row over one-half of tray. Sprinkle some Parmesan evenly over asparagus.
  3. Using a paper towel, pat prawns dry. In a medium bowl, toss prawns with garlic, chili flakes and the remaining oil, ¾ tsp salt and ½ tsp pepper. Spread the prawns over the other side of the tray.
  4. Roast for about 10 minutes or until cooked through and asparagus is tender. Sprinkle prawns with parsley and asparagus with Parmesan. Sprinkle so fresh lemon juice and enjoy!
