1.) Ceviche with Squash Ribbons

Ingredients: -300g fresh fish fillet (mullet, dorada, sea bass, salmon, palamida, etc.) -2 squash -5 tbsp. olive oil -1/2 red onion -1 lemon -sunflower or soybean sprouts -coarse salt -black pepper

Method of preparation:

  1. Cut the fish fillet as thin as possible and lay out on a platter. If the fineness of the slicing is not your strong point, you can flatten the fish on a platter by covering it with cellophane.
  2. Sprinkle the fish with two tablespoons of olive oil, sprinkle a little with salt and proceed to the zucchini.
  3. Use the peeler to turn the zucchini into green ribbons. Discard the seeds and core.
  4. Beautifully lay out the ribbons on the fish.
  5. Finely chop the red onion and sprinkle it on the ceviche.
  6. Add sprouts, squeeze out the juice of a whole lemon and the rest of the olive oil.
  7. Sprinkle with salt and pepper.
  8. Enjoy!

2.) Gazpacho

Ingredients: -2 cans of tomatoes in their own juice -3 cucumbers -1 bell pepper -1 red onion -2 cloves of chili garlic to taste -1 lemon 4 tablespoons. olive oil -green onion -salt -pepper

Method of preparation:

  1. Add all ingredients to a blender and grind them together.
  2. Add salt, lemon juice, pepper and olive oil.
  3. Let sit in the fridge for at least an hour to cool before serving.
  4. Sprinkle with green onion before serving.
  5. Enjoy!

3.) Zucchini Carpaccio

Ingredients: -2 zucchini -a handful of cherry tomatoes -sunflower or soy sprouts -1/2 lemon -salt -pepper -olive oil

Method of preparation:

  1. As in the ceviche recipe (above), use a vegetable peeler to turn the zucchini into ribbons.
  2. Distribute the ribbons on the platter, put halves of cherry tomatoes on top, add sprouts.
  3. Pour the juice of half a lemon, olive oil.
  4. Sprinkle with salt and pepper.
  5. Done!

4.) Green Papaya Salad

Ingredients: -1 green papaya -2 medium carrots -2 handfuls of cherry tomatoes -2 limes -4 cloves of garlic -2 tbsp. fish sauce -4 tablespoons brown sugar -2 tsp salt -2 tsp chili flakes -a handful of roasted peanuts -cilantro

Method of preparation:

  1. Mix lime juice, fish sauce, salt, chili, sugar and finely chopped garlic.
  2. Thinly slice papaya and carrots into spaghetti / straws with a special device or with a knife. (Make sure if using a knife to slice it thin)
  3. Cut the cherry tomatoes into quarters.
  4. Mix the vegetables with the sauce, sprinkle the salad with cilantro and chopped peanuts before serving.
  5. Walla, enjoy!

5.) Lemonade with Orange and Rosemary

Ingredients: -2 oranges -2-3 sprigs of rosemary -soda -ice -brown sugar

Method of preparation:

  1. Cut the orange into rings, throw rosemary on top and cover with brown sugar.
  2. Wait for the oranges to release their juice.
  3. Fill everything with soda, add ice, and this refreshing drink is ready!
  4. Enjoy!
